1/2 cup chopped mixed nuts (almonds, walnuts, pistachios)
1/4 cup chia seeds
1 cup unsweetened almond milk
1 tablespoon honey (optional)
Rinse the berries and slice the strawberries.
Mix the chia seeds, Ceylon cinnamon, and almond milk in a small bowl and stir well. Let the mixture sit for 5-10 minutes, until the chia seeds have absorbed the liquid and the mixture has thickened.
In a separate bowl, combine the mixed nuts and berries.
Pour the chia seed mixture over the berry and nut mixture and stir gently to combine.
Drizzle honey over the top, if desired.
